• Watermelon -1 kg
• Salt to taste
• Pomegranate juice -1 1/2 cup
• Tamarind paste -3 tablespoon
• Spring onions -5 stalks
• Powdered black pepper -1 teaspoon
• 10 mint leaves
Chop watermelon into small cubes. Dice the cucumber into small cubes. Keep them aside.
Transfer the chopped cucumber and watermelon in a mixing bowl. Sprinkle black pepper and salt on them. Cover the mixture with a lid.
Meanwhile in a non stick pan add pomegranate juice followed by adding tamarind paste. Allow the mixture to simmer on medium flame.
Remove it from flame. Top the mixture with black pepper and salt. Then allow the mixture to rest until it cools down.
Arrange spring onions on a clean plate and transfer the cucumber and watermelon mixture on it. Add the prepared pomegranate dressing on the said mixture.
Garnish it with some mint leaves or cheese and serve fresh!
